The kitchen
The tandoor runs hot all service. Lamb is marinated overnight, chicken comes off the coals charred at the edges, and breads are pulled straight from the oven rather than held warm.
The curry side is cooked down properly. Punjabi lamb curry, butter chicken built on tandoori chicken rather than boiled, lamb saag with spinach and spice. None of it is assembled from a single base gravy.
The bar
The Jewellery Quarter is a neighbourhood that eats late and drinks after. Our bar is built for that, and it runs on past the kitchen rather than closing with it.
